3 c. rolled oats
1/3 c. brown sugar
1/3 c. honey
2 tsp. ground cinnamon
2 tsp. baking powder
1 tsp. salt
1/2 c. melted butter or low-fat butter alternative (such as coconut oil)
2 tsp. vanilla extract
3/4 c. Craisins
Preheat oven to 350 degrees. In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla. Stir in dried Craisins. Spread into a greased 9×13 inch baking dish. Bake in preheated oven for 40 minutes.
Top with fresh fruit, peanut butter and jelly, or whatever else you like on your oatmeal! Serve warm freshly out of the oven or warmed in microwave.
